This air fryer eggplant parmesan is a cozy, crispy, cheesy Italian dinner for two—made lighter, faster, and totally meatless. This small‑batch twist on a classic gives you all the comfort of a restaurant‑style dish without turning on the oven or making a huge pan. This dish is perfect for weeknights, date nights, or anytime you want something satisfying without the fuss.

In this recipe, I’ll show you how to get that golden, crunchy coating, how to keep the eggplant tender (not soggy!), and how to build those saucy, cheesy layers in just the right proportions for two.

Air Fryer Eggplant Parmesan

Ingredients
  

  • 1 Small Eggplant sliced into ½ inch rounds
  • 1 c Bread Crumbs
  • 1 t Greek Seasoning Blend
  • 1 Egg
  • Salt
  • Spray oil
  • Marinara Sauce
  • Shredded Mozzarella Cheese
  • Cooked Spaghetti Noodles or Zucchini Noodles

Instructions
 

  • Salt the eggplant rounds and allow to sit for 10-15 minutes
  • Dry the eggplant with a paper towel to remove the moisture that the salt brought out of the eggplant
  • Beat egg in a bowl and in another bowl add the breadcrumbs and Greek seasoning
  • Dip the eggplant into the egg and then into the seasoned bread crumbs
  • Place the breaded eggplant into the air fryer and spray the top with spray oil
  • Air fry at 385 for 10 minutes, flipping at the 5-minute mark (spray the other side of the eggplant once you flipped it)
  • Top the eggplant with marinara and cheese and cook for one more minute
  • Once the eggplant is finished cooking top the noodles with the eggplant parmesan
  • Enjoy!

Greek Seasoning Blend

This Greek seasoning blend is great as a salad dressing seasoning, a vegtable seasoning or on chicken.

Ingredients
  

  • 2 T Oregano
  • 2 T Basil
  • 1 T Garlic Powder
  • 1 T Onion Powder
  • 1 t Salt
  • 1 t Pepper

Instructions
 

  • Combine all spices and store in an airtight container.
