Easy Pork Tenderloin (Air Fryer + Instant Pot) with Small‑Batch Coleslaw & Potato Salad

Small Batch Potato Salad

Ingredients
  

  • 2 c Chopped Potatoes
  • ¼ c Mayo
  • 1 Hard boiled Egg
  • 1 t Mustard
  • 2 T Diced Onion
  • 1 T Relish
  • 1 T Rice Vinegar White Vinegar will also work
  • 1/8 t Paprika
  • 1/8 t Pepper
  • 1/8 t Salt

Instructions
 

  • Boil the potatoes until they are fork tender
  • While the potatoes are boiling create your potato salad dressing
  • In a bowl combine the egg yolks, the relish, mayo, mustard, salt ,pepper, paprika, onion and the vinegar
  • Stir and smooth the egg yolks until everything is combined
  • Dice the egg white and add to the dressing mixture
  • Once the potatoes are fork tender add them to the bowl with the dressing and stir until the potatoes are coated.
  • Enjoy!

Instant Pot Pork Tenderloin

Ingredients
  

  • Pork Loin
  • BBQ Seasoning
  • 1 Onion Sliced
  • 1 c Water or Broth
  • 1/4 t Optional Liquid Smoke
  • BBQ Sauce

Instructions
 

  • Coat pork tenderloin with BBQ Seasoning
  • If you would like to sear the pork tenderloin, sauté using the sauté function
  • Place sliced onion in the instant pot, and add the liquid smoke if using.
  • Add water
  • Cook on High Pressure for 8 minutes
  • Allow to naturally release for 10 minutes
  • Coat with barbecue sauce and Enjoy!

Notes

If you are using a pork loin, you will cook the on high for 35 minutes and let it naturally release for 10 minutes.

Air Fryer Pork Tenderloin

Ingredients
  

  • Pork Tenderloin
  • BBQ Seasoning
  • BBQ Sauce

Instructions
 

  • Coat the pork tenderloin with BBQ Seasoning
  • Air fry at 375 for 10 minutes
  • Flip the tenderloin over and lower the air fryer temperature to 350 and air fry for another 10 minutes
  • Once the tenderloin is cooked fully coat the tenderloin with the BBQ sauce and let the tenderloin rest.
  • Slice and Enjoy!

BBQ Seasoning

Ingredients
  

  • 1 T Salt
  • 1 T Pepper
  • 1 T Smoked Paprika or Chipotle
  • 2 T Brown Sugar
  • 1-1/2 t Garlic Powder and Onion Powder
  • 1/2 t Thyme

Instructions
 

  • Combine all seasonings and store in an airtight container.
