2 Serving Casseroles for Breakfast Lunch and Dinner

Hi Friend!

Today we are continuing our small batch casserole recipe series with 2 serving casseroles for Breakfast Lunch and Dinner. We are making a Baked Strawberries and Cream Oatmeal, a Pizza Casserole that will have your house smelling like a pizzeria, and a Chicken Spanakopita my delicious take on the Greek Spinach Pie. You will LOVE all three of these recipes friend, I can’t wait for you to try them.

Baked Strawberries and Cream Oatmeal

Ingredients
  

  • 1 c Strawberries if you are using frozen strawberries thaw them first
  • 2 T Brown Sugar
  • 1 Egg
  • ½ t Baking Powder
  • ¼ t Salt
  • 1 c Milk
  • 1 c Oats
  • 2 T Whipping Cream

Instructions
 

  • Combine the strawberries and the brown sugar and using a fork or pastry cutter mash the strawberries.
  • Combine the rest of the ingredients except the whipping cream and stir to combine
  • Place in a greased glass loaf pan
  • Bake at 375 for 15-20 minutes
  • Top with the whipping cream
  • Enjoy!

Notes

If you are using a metal loaf pan your cooking time will need to be reduced by 3-5 minutes.

Pizza Casserole

Ingredients
  

  • 1 ½ C Cooked Pasta I like Cavatappi but elbow penne or rotini would work as well
  • 1 c Marinar Sauce
  • 1 c Italian Blend Cheese
  • Pizza Toppings of your choice.

Instructions
 

  • Place the noodles into a greased loaf pan
  • Layer the sauce and pizza toppings then top with the cheese
  • Bake at 350 for 15 minutes
  • Enjoy!

Notes

Chicken Spanakopita

Traditional Spanakopita is made with layers and layers of Phyllo dough, my version uses puff pastry for a delicious flaky crust with minimal effort.

Ingredients
  

  • 2 c Shredded Chicken
  • 1 c Fresh Spinach Chopped
  • 1 c Ricotta Cheese
  • 1 Garlic Clove Minced
  • 1 c Shredded Mozzarella Cheese
  • ½ c Feta Cheese
  • 1 t Greek Seasoning Blend
  • ½ t Dill
  • ½ t Dried Parsley
  • Puff Pastry

Instructions
 

  • Combine all the ingredients except the puff pastry
  • In a greased loaf pan layer of puff pastry, then the chicken mixture and top another sheet of puffed pastry
  • Brush the top with olive oil
  • Bake at 400 for 25-30 minutes. Check at the 20 minute mark, check and if the puffed pastry is getting too browned cover with foil and continue cooking.
  • Enjoy!

Notes

A few notes here, if you feel the chicken mixture is not moist enough for your liking you can add an egg to the mixture. Also, if you are using a metal loaf pan your cooking time will need to be reduced by 3-5 minutes.
