Pumpkin: Love It or Hate It? Try These 3 Easy Recipes for Two

Pumpkin is one of those ingredients people tend to have strong opinions about—either you can’t wait for pumpkin season, or you avoid it altogether. But love it or hate it, pumpkin is incredibly versatile, and with the right recipe, it might just surprise you.

In this post, I’m sharing three easy pumpkin recipes made specifically for two servings. Whether you’re cooking for a date night, a cozy evening at home, or simply don’t want a fridge full of leftovers, these dishes offer fall flavor without the fuss.

Pumpkin Cheesecake Pudding

Ingredients
  

  • 1/2 c Cottage Cheese
  • 2 T Jello Cheesecake Mix
  • 2 T Pumpkin
  • 1-2 T Milk

Instructions
 

  • Add all ingredients and blend to combine.
  • Taste test for sweetness. Add a teaspoon of brown sugar if added sweetness is needed.
  • Top with crumbled Graham Crackers
  • Enjoy with a spoon or use as a dip with Graham Crackers.

2 Ingredient Pumpkin Muffins

Ingredients
  

  • Spice Cake Mix
  • 1 15 oz can of Pumpkin
  • 1/2 C Water if Needed

Instructions
 

  • Combine pumpkin and cake mix.
  • If the mixture is too thick add 1/2 c of water.
  • Add to a greased muffin pan
  • Bake at 350 for 18-20 minutes.
  • Enjoy!

Notes

A few notes on this one. You can add pecans, chocolate or butterscotch chips as optional add ins. You can also top these with a cream cheese frosting, simply combine 2 T softened Cream Cheese with 2 T Powdered Sugar and a Splash of vanilla. 

Crockpot Pumpkin Bread Pudding for Two

Ingredients
  

  • 1 C Cubed Bread. I used Hawaiian Rolls but bakery bread would work as well.
  • ¼ c Pumpkin
  • 1 Egg
  • ½ C Milk
  • ½ t Vanilla
  • 2 T Brown Sugar
  • Pinch of Salt
  • For the Praline Topping
  • 1 T Butter
  • 1 T Brown Sugar
  • 1 T Pecans

Instructions
 

  • Create your custard by combining all ingredients except the cubed bread.
  • Once your custard is combined, add your bread.
  • Soak for at least 6 hours or up to 24 hours so the custard can absorb into the bread.
  • Line the crockpot with parchment paper or an air fryer liner.
  • Place into the 2 qt crockpot and cook on high for 2 Hours
  • Once your bread pudding has finished cooking make the praline topping.
  • Melt 1 T Butter and 1 T of Brown Sugar and stir until the brown sugar is smooth and bubbling.
  • Add pecans
  • Pour praline topping over the bread pudding.
  • Enjoy!
