4 Simple Slow Cooker Breakfasts for One

Hi friend!

These 4 simple slow cooker breakfasts are going to start your day of right! Put these together the night before and wake up to a nutritious breakfast OR use these as a Breakfast for Supper idea!

Apple Cinnamon Oatmeal

Ingredients
  

  • ½ c Oats
  • 1 c Milk
  • ¼ c Diced Apples one small apple
  • ½ t Cinnamon
  • 1/8 t Nutmeg
  • ¼ t Salt
  • 1-2 T Maple Syrup for Sweetness

Instructions
 

  • Spray or Butter the inside of your slow cooker.
  • Add all ingredients except for the maple syrup. Cover and cook on low for 7-8 hours
  • Once your oatmeal is finished cooking add 1-2 T of Maple Syrup or Honey for sweetness.
  • Enjoy!

Blueberry French Toast Casserole

Ingredients
  

  • 1 cup chopped bread French loaf, Hawaiian sweet rolls or croissant
  • ½ c Milk
  • 1 Egg
  • 1 T Mascarpone Cheese
  • 2 T Brown Sugar
  • ½ t Vanilla
  • ½ c Blueberries
  • 1 T Powdered Sugar for the glaze
  • 1 t Lemon Juice also for the glaze

Instructions
 

  • Spray or Butter the inside of your slow cooker.
  • Combine all ingredients except the powdered sugar and lemon juice and add to the slow cooker.
  • Cover and cook on low 7-8 hours
  • Mix your powdered sugar and lemon juice together and pour over the top of the casserole.
  • Enjoy!

Ham and Swiss Frittata

Ingredients
  

  • 2 Eggs
  • ¼ c Milk
  • 2 T Diced Ham
  • 2 T Diced Swiss Cheese
  • 2 T Diced Onions
  • 2 T Diced Red Pepper
  • ½ t House Seasoning

Instructions
 

  • Line the inside of your slow cooker with parchment paper.
  • Spray the parchment paper
  • Combine all ingredients and pour into the slow cooker
  • Cover and cook on low for 7-8 hours
  • Enjoy!

Crockpot Breakfast Casserole

Ingredients
  

  • ¼ lb Cooked Sausage
  • 2 Eggs
  • 2 T Diced Onion
  • 2 T Diced Pepper
  • ¼ c Milk
  • 1/2 c Shredded Cheese
  • 1 c Shredded Hashbrowns
  • 1 t House Seasoning

Instructions
 

  • Combine all ingredients and add the mixture to the greased crockpot.
  • Cover and cook on low for 6-8 Hours
  • Enjoy!

  1. I have a 1 1/2 qt slow cooker that I used for the oatmeal recipe. When I looked at it in the morning, it was all dried up and had no taste, I cooked it for 7 hours, too long I guess. What can I do next time to make it better? Thanks. I was really looking forward to my breakfast.

    1. Oh wow Sandy your crockpot cooks much hotter than mine. I’m so sorry it didn’t work for you. Maybe try to make again for brunch and check it at the 4-5 hour mark? Let me know how it turns out.
