Crockpot Soups for One

Hi friend!

It has been so gloomy and cold at my house, the perfect soup weather! This week I made myself a hug in a bowl everyday for lunch. Come along as I share with you the 5 soups I made for myself this week.

Hamburger Soup for One

This soup for one is based on a Pioneer Woman recipe. You can find her original recipe here. https://www.thepioneerwoman.com/food-cooking/recipes/a11374/hamburger-soup/

Ingredients
  

  • ¼ lb Ground Beef Browned and Drained
  • 1 1/2 Cups of Beef Broth
  • 2 T Diced Celery
  • 2 T Diced Carrots
  • 2 T Diced Onion
  • 2 T Diced Red Pepper
  • ¼ c Petite Diced Tomatoes
  • ¼ t Minced Garlic
  • ¼ t Parsley
  • ¼ t Oregano
  • ¼ t Black Pepper
  • 1/8 tsp Cayenne Pepper if you like it spicy you could add more
  • 1 Bay Leaf

Instructions
 

  • Add all the ingredients to a 2 qt crockpot and cook on High for 3 Hours or Low for 6 Hours.

Sausage and Lentil Soup for One

This is my version of Carrabba’s Sausage and Lentil Soup. I do not add pasta to mine, but if you’d like ¼ c Ditalini Pasta is what I would recommend.

Ingredients
  

  • 1 Italian Sausage Link casing removed and Browned 1/4 lb
  • ¼ c Dry Lentils that have been rinsed
  • 1.5 c Chicken Broth
  • ¼ c Petite Diced Tomatoes
  • 2 T Onion
  • 2 T Celery
  • 2 T Carrots
  • ¼ t Minced Garlic or Garlic Powder
  • ¼ t Oregano
  • 1/8 t Thyme
  • ¼ t Basil
  • Salt and Pepper
  • 1 Bay Leaf

Instructions
 

  • Add all the ingredients to a 2 qt crockpot and cook on High for 2 Hours (3 Hours for a softer lentil. This is personal preference. I would taste test this at 2 hours and see if the extra hour is needed) or Lowf or 6 Hours.

Potato Soup for One

This is a copycat Panera Potato Soup. It is a thinner soup, if you prefer a thicken broth you can add 1 T of flour to the soup to thicken it up.
 

Ingredients
  

  • 1 C Cubed Potatoes
  • 1 C Chicken Broth
  • 1 Slice of Cooked Bacon Chopped
  • 2 T Diced Celery
  • 2 T Diced Onions
  • ¼ t Minced Garlic
  • Salt and Pepper
  • 1 T Cream Cheese
  • ¼ c Heavy Cream
  • ¼ C Cheddar Cheese

Instructions
 

  • Add all the ingredients to a 2 qt crockpot EXCEPT the Cream Cheese, Heavy Cream, and Cheddar Cheese. You will add these after your soup is finished cooking.
  • Cook on High for 3 Hours or on Low for 6. Once the veggies are fork tender turn off the crockpot and add the cream cheese, cheddar cheese, and heavy cream.

Chicken Noodle Soup for One

This is a single serving of my Chicken Noodle Soup recipe that I have on my channel as a YouTube Short.

Ingredients
  

  • 4 oz Cubed Chicken If you are going to cook this all day leave this as a while piece of chicken breast or thigh so the chicken will not dry out.
  • 1 ½ C Chicken Broth
  • 2 T Diced Carrots
  • 2 T Diced Celery
  • 2 T Diced Onions
  • ¼ t Minced Garlic
  • ¼ t Parsley Flakes
  • Salt and Pepper
  • ¼ C Egg Noodles

Instructions
 

  • Add all the ingredients EXCEPT the Egg Noodles to a 2 qt Crockpot and cook on High for 2 ½ Hours.
  • Add the Egg Noodles and Cook for another 30 minutes.

Chili for One

Ingredients
  

  • ¼ lb Ground Beef Browned and Drained
  • 1 T Tomato Paste
  • 8 oz Tomato Sauce
  • 8 oz Water
  • ½ c Red Kidney Beans
  • ¼ c Fire Roasted Tomatoes
  • 1 T Chili Seasoning

Instructions
 

  • Add all of the ingredients to a 2 qt Crockpot and Cook on High for 2 Hours or Low for 4 Hours.
  • Enjoy!

Chili Seasoning Mix

This is for a mild chili seasoning mix. Add 1/4 t of Crushed red Pepper Flakes to amp up the spice.

Ingredients
  

  • 2 T Chili Powder
  • 1 T Cumin
  • 2 t Paprika
  • 2 t Oregano
  • 1 t Garlic Powder
  • 1 t Onion Powder

Instructions
 

  • Combine all ingredients and store in an air tight container.
