5 Simple Meal Prep Meals

Hi friend! In today’s recipe, I’ll be sharing 5 simple weeknight meal kits that you can meal prep at the beginning of the week to get you started with the idea of meal planning. Meal planning will save you time and money, and you’ll be able to answer the “What’s for dinner?” question on Monday for the entire week!

Here are the recipes, these recipe cards are going to give you the ingredient measurements and cooking instructions. For the freezer meal suggestions, please see the video above for those instructions.

Lemon Greek Chicken

Ingredients
  

  • 1 lb Chicken
  • 1 Red Onion
  • 2 Zucchini
  • 1 C Broccoli
  • 1 Red Pepper
  • For the Marinade:
  • Juice of 1 Lemon
  • Zest of ½ Lemon
  • 2 Garlic Cloves
  • ¼ C Olive Oil
  • 1 T of each Rosemary Basil and Oregano

Instructions
 

  • Preheat oven to 375
  • Place all of the marinade ingredients together and coat the chicken
  • Chop all of the veggies and place them on a well-oiled large sheet pan.
  • Bake at 375 for 20 minutes
  • *If you would like more of a char on the veggies at the 20-minute mark remove the chicken from the sheet pan and bake just the veggies for an additional 10 minutes.

Sloppy Joes

Ingredients
  

  • 1 lb ground beef
  • 1 Chopped Onion
  • 1 Chopped Bell Pepper
  • 1 Clove of Garlic
  • 1.5 cups of Ketchup
  • 3 T BBQ rub.
  • 1 T Apple Cider Vinegar

Instructions
 

  • Sauté peppers and onions in a pan with a little oil, once they are softened add in the garlic.
  • Push the veggies to the side of your pan and add your ground beef.
  • Brown ground beef and mix the veggies in with the beef.
  • Drain if necessary.
  • Add the ketchup, BBQ seasoning and the Apple Cider Vinegar
  • Stir to combine
  • Serve in a bun or over a potato.
  • Enjoy!

BBQ Seasoning

Ingredients
  

  • 1 T Salt
  • 1 T Pepper
  • 1 T Smoked Paprika or Chipotle
  • 2 T Brown Sugar
  • 1-1/2 t Garlic Powder and Onion Powder
  • 1/2 t Thyme

Instructions
 

  • Combine all seasonings and store in an airtight container.

Chicken Fajitas

Ingredients
  

  • 1 lb Chicken Breasts or Chicken Tenderloins
  • 1 T Fajita Seasoning or 1 package of fajita seasoning mix
  • 1 Onion
  • 2 Bell Peppers colored is best
  • 2 Cloves Garlic
  • 8 Tortilla Shells

Instructions
 

  • Slice and Season chicken
  • Sauté in a pan with a little oil for 4 minutes on each side and remove from pan to rest
  • Sauté the onions and peppers and garlic in the hot pan
  • Serve in warmed tortillas and Enjoy!

Salsa

Ingredients
  

  • 1 15 oz Can of Diced Tomatoes
  • Juice of 1 Lime
  • 1 Jalapeno
  • 1 Clove of Garlic
  • ¼ c Red Onion
  • Salt and Pepper
  • Optional 1 tsp Cilantro

Instructions
 

  • Rough chop the onion and jalapeno and place in a blender.
  • Pulse until the salsa is the thickness of your liking.
  • We like ours a little chuncky so 2 pulses works great.
  • Serve with Fajitas, Tacos, or just on a Chip.
  • Enjoy!

Shortcut Beef Stew

Ingredients
  

  • 1 lb Stew Meat
  • 1 lb Honey Gold Potatoes
  • 2 C Baby Carrots
  • 1 T Tomato Paste
  • 2 Bay Leaves
  • House Seasoning Blend
  • Optional: 1 Packet of Beefy Onion Lipton Onion Soup Mix

Instructions
 

  • Instant pot Instructions:
  • Combine beef, tomato paste, and seasonings and place in the instant pot. Add water just until it reaches the top of the beef. Add potatoes and Carrots and cook on high (the beef setting) for 30 minutes. Do a natural release for 10 minutes and enjoy! If you would like a thicker broth simply create a slurry of warm broth and flour (1 T flour to 2 T broth) and add that to your beef stew.
  • Crock Pot Instructions:
  • Combine beef, tomato paste, and seasonings and place in the crock pot. Add water just until it reaches the top of the beef. Add potatoes and Carrots and cook on high for 4 hours or low for 7-8 hours

House Seasoning Blend

This is our go to seasoning blend. Use it on vegtables, burgers, or chicken it goes with everything!

Ingredients
  

  • 1 T Salt
  • 1 T Pepper
  • 1 T Garlic Powder
  • 1 T Onion Powder

Instructions
 

  • Combine all spices and store in an airtight container.
