Shortcut Tomato Soup for One

Ingredients
  

  • 6 oz Marinara Sauce (Tomato and Basil works best)
  • 2 oz Chicken Broth
  • 2 oz Half and Half

Instructions
 

  • Heat the broth and marinara sauce until it simmers.
  • Remove from the heat and stir in the half and half
  • If the soup has too many big pieces of tomato, use an immersion blender and blend it until smooth.
  • Serve warm with a grilled cheese sandwich
  • Enjoy!

Avocado Toast with Scrambled Eggs

Ingredients
  

  • 2 Slices of Bread
  • 1 Avocado
  • ½ Lime
  • 1/8 t Salt
  • 1/8 t Pepper
  • 1 T Butter
  • Egg

Instructions
 

  • Toast the bread
  • Smash the avocado with the juice of the lime and a pinch of salt and pepper
  • Melt Butter in a sauté pan
  • Crack the egg and mix together the egg white and yolk
  • Pour eggs onto melted butter and cook stirring constantly
  • Remove from the heat as soon as the eggs are set.
  • Top the top with smashed avocado and scrambled eggs
  • Top with Everything but the Bagel Seasoning Blend
  • Enjoy!

Chicken Souvlaki

  • 1 Cooked Chicken Breast
  • Tomatoes
  • Sliced Cucumber
  • Diced Purple Onion
  • 1 Pita
  • Tzatziki Sauce

Instructions
 

  • Open pita and place tzatziki sauce inside
  • Slice chicken and place chicken, cucumber, tomatoes, and diced onions inside the pita
  • Enjoy!

Chicken Quesadilla Supreme

Ingredients
  

  • 2 pats of butter
  • Shredded Cheddar Cheese
  • Cooked chicken breast chopped
  • ¼ t Taco Seasoning
  • Flour tortilla
  • Chopped Tomatoes
  • Shredded Lettuce
  • Diced Onion
  • Sour Cream

Instructions
 

  • In the flour tortilla place the chicken, taco seasoning, and cheese
  • Melt the butter in a sauté pan
  • Place filled tortilla in the pan
  • Toast both sides of the quesadilla
  • Remove from pan and top with lettuce, tomatoes, onion and sour cream
  • Enjoy!

Steak Sandwich

Ingredients
  

  • ¼ lb Shaved Steak Deli Roast Beef or Sliced Flank Steak works well here as well
  • 1 Sub Roll
  • 2 Slices Cheese Havarti Provolone or Monterrey Jack Cheese would all work here
  • 1 t Steak Seasoning
  • 1 t Worcestershire Sauce
  • 2 T Diced Peppers
  • 2 T Diced Onions

Instructions
 

  • Heat 1 T oil in a pan and add peppers and onions to the pan
  • Add steak, Worcestershire and steak seasoning and stir to combine
  • Sauté until the steak is to your desired color
  • Serve on the toasted sub roll with a side salad
  • Enjoy!
